Ingredients
One tin chopped tomatoes
One small onion or half a leak
Fresh vegetables of your choice
Tinned , vegetables or frozen are just as good.
Half a tin of lentils or a large cup of dried lentils soaked
2 large spoons of cooking oil
Crushed garlic, garlic paste, or ground garlic
Ginger, fresh ground or paste
Turmeric fresh or ground
Two teaspoons of mixed spice
Two slices of your favourite bread
Butter or margarine for spreading. Garlic optional
2 tsp of sugar
Method
Prepare fresh vegetables, cut chunky or fine, depending on taste. Cut fine if you want a smooth soup.
Fresh vegetables can be obtained ready prepared.
Place in a saucepan with a tin of chopped tomatoes and half a cup of water, and the sugar. Bring to the boil, then turn down to a simmer.
Put oil in the frying pan. Add the garlic, ginger, turmeric and spice mix, fry off gently and then put aside. This can be done in the microwave in a dish.
While vegetables are simmering, add lentils.
Add spices to the vegetables and continue to simmer.
It is best to use a covered saucepan to reduce liquid evaporating. Once vegetables are soft add another half cup of water.
Liquidise or leave chunky.
Butter both sides off the bread. Leave whole, cut in half or cubes. Add garlic as choice.
Shallow fry, air fryer or oven.
Add to soup to serve.
